Cumbia Broccoli Salad With Mushrooms

Broccoli
60 grams
Chickpeas
1 tbsp
Miso
70 grams
Mushrooms
1 tbsp
Olive Oil

Onion
1 tbsp
Rice Vinegar
1 tbsp
Soy Sauce
60 grams
Tofu

Prep

  1. Wash and cut your broccoli and Mushrooms so that they all have a similar size and shape.
  2. Finely chop your onion.
  3. Slice your tofu into approximately 2x2cm cubes (1"x 1"). Try to ensure all pieces are roughly the same size.

Building A Salad

  1. Mix broccoli, chickpeas, Mushrooms, onion and tofu together in a bowl.
  2. Mix miso, olive oil, rice vinegar and soy sauce together in a bowl with salt and pepper, then drizzle on top of your dish.
