Ingredients

50 grams
Arugula
0.5 tbsp
Balsamic Vinegar

Chili Pepper
0.75 tbsp
Chives
2 Egg
Eggs
60 grams
Gorgonzola
1 tbsp
Honey
50 grams
Leeks
0.5 tbsp
Lemon
1 tbsp
Olive Oil
4 tbsp
Pinenuts
50 grams
Radicchio
1 tsp
Rosemary

Prep

  1. Wash and cut your radicchio so that they all have a similar size and shape.
  2. Finely chop your chives.
  3. Grate or slice your gorgonzola.

Heating Steps

  1. Toast pinenuts on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
  2. Heat olive oil in a pan and add chili pepper and leeks, rosemary and fry at lower temperature for several minutes.
  3. Turn up the heat to medium and add Radicchio to your pan and fry for 5 minutes.
  4. Crack your eggs into a bowl and whisk well. Add a pinch of salt and pepper.
  5. Add your balsamic vinegar, honey, lemon juice and olive oil to the bowl and mix.
  6. Add your chili pepper, leeks and radicchio to the whisked eggs and mix.
  7. Add gorgonzola on top and cook until melted.

Finishing Touches

  1. Add Arugula, Chives and Pinenuts on top.
