Elton John's Salad With Pumpkin Seeds

Ingredients

6 handful
Arugula

Avocado
1.5 tbsp
Balsamic Vinegar

Celery Stalk
2 Egg
Eggs
80 grams
Farro
80 grams
Goat Cheese
2 tbsp
Olive Oil
6 tbsp
Parsley

Red Onion
6 tbsp
Sunflower Seeds

Prep

  1. Boil farro according to instructions on package.
  2. Boil your eggs for 10-12 minutes, let cool then peel. Slice evenly and use as your topping.
  3. Wash and cut your celery stalk so that they all have a similar size and shape.
  4. Finely chop your parsley and red onion.
  5. Grate or slice your goat cheese.
  6. Slice your avocado into approximately 2x2cm cubes (1"x 1"). Try to ensure all pieces are roughly the same size.

Heating Steps

  1. Toast sunflower seeds on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.

Building A Salad

  1. Mix arugula, avocado, celery stalk, farro and red onion together in a bowl.
  2. Mix balsamic vinegar, olive oil and parsley together in a bowl with salt and pepper, then drizzle on top of your dish.
  3. Add Goat Cheese and Sunflower Seeds on top.
