- Peel and cut your Carrot. All ingredients should have a similar size and shape.
- Finely chop your Garlic and Shallots.
- Heat oil in a pan. Then, add carrot, garlic and shallot and fry at lower temperature for a few minutes.
- Add edamame to your pan and fry for 10 minutes. Finally, add spinach and fry for another 5 minutes.
- Add Coconut Milk and Lemon and mix.
- Toast Walnuts on a hot and dry pan. Then remove from pan.
- Add Raisins, Sun-Dried Tomato and Walnuts on top.
