Prep

  1. Peel and cut your potatoes. All ingredients should have a similar size and shape.
  2. Wash and cut your broccoli, green beans, Mushrooms, tomatoes and zucchini so that they all have a similar size and shape.
  3. Finely chop your garlic and onion.

Heating Steps

  1. Toast pumpkin seeds on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
  2. Heat olive oil in a pan and add onion, cayenne pepper, chili powder, garlic and thyme and fry at lower temperature for several minutes.
  3. Turn up the heat to medium and add Potatoes to your pan and fry for 15 minutes.Then add Mushrooms and Zucchini and fry for 5 minutes.Then add Broccoli and fry for 5 minutes.Finally, add Green Beans, Spinach and Tomatoes and fry for 5 extra minutes.
  4. Add olive oil and red wine vinegar to your pan and mix.

Finishing Touches

  1. Add your vegetables to your plate.
  2. Add Pumpkin Seeds on top.
