Prep

  1. Peel and cut your sweet potato. All ingredients should have a similar size and shape.
  2. Wash and cut your romaine lettuce so that they all have a similar size and shape.
  3. Slice your avocado as you like. Try to ensure all pieces are roughly the same size.
  4. Finely chop your bell pepper, cashews, garlic and onion.

Heating Steps

  1. Heat coconut oil in a pan and add garlic and onion, and fry at lower temperature for several minutes.
  2. Turn up the heat to medium and add Corn and Sweet Potato to your pan and fry for 10 minutes.Finally, add Bell Pepper and Black Beans and fry for 5 extra minutes.

Forming Your Patties

  1. Add apple cider vinegar, bell pepper, black beans, corn, garlic, onion and sweet potato to your blender and pulsate until desired texture. If the mixture seems too dry, you can add a bit of water or liquid from the can of beans.
  2. Wet your hands and shape the dough into patties. Fry them in oil on high heat for a few minutes per side until they become golden brown.
  3. Then remove from pan and roast in the oven for 15-20 minutes at 200°C (400°F).

Finishing Touches

  1. Toast your bun in the oven until the desired level of crispiness.
  2. Add Avocado, Nutritional Yeast and Romaine Lettuce on top.
