Prep

  1. Peel and cut your potatoes. All ingredients should have a similar size and shape.
  2. Wash and cut your broccoli and tomatoes so that they all have a similar size and shape.
  3. Finely chop your garlic, onion and parsley.
  4. Grate or slice your mozzarella and parmesan cheese.

Heating Steps

  1. Heat olive oil in a pan and add garlic and onion, and fry at lower temperature for several minutes.
  2. Turn up the heat to medium and add Potatoes to your pan and fry for 20 minutes.Finally, add Broccoli and fry for 10 extra minutes.
  3. Crack your eggs into a bowl and whisk well. Add a pinch of salt and pepper.
  4. Add your sour cream to the bowl and mix.
  5. Pour your egg mixture on top of your vegetables and heat until omelette is done.
  6. Add mozzarella and parmesan cheese on top and cook until melted.

Finishing Touches

  1. Add Parsley, Tomatoes and Tortilla Chips on top.
