Prep

  1. Wash and cut your tomatoes so that they all have a similar size and shape.
  2. Finely chop your basil, celery stalk, garlic and onion.
  3. Grate or slice your mozzarella and parmesan cheese.

Heating Steps

  1. Heat oil in a pan and add celery stalk, garlic and onion, and fry at lower temperature for several minutes.
  2. Turn up the heat to medium and add Spinach to your pan and fry for 5 minutes.
  3. Crack your eggs into a bowl and whisk well. Add a pinch of salt and pepper.
  4. Add your ricotta and sour cream to the bowl and mix.
  5. Pour your egg mixture on top of your vegetables and heat until omelette is done.
  6. Add mozzarella and parmesan cheese on top and cook until melted.

Finishing Touches

  1. Add Basil and Tomatoes on top.
