Broccoli Rice With Pumpkin Seeds

Allspice

Broccoli

Chives

Cumin

Fish Sauce

Prep

  1. Thoroughly wash your broccoli and cut away all excess leaves. Then grate or place in your food processor until the broccoli has the consistency of rice.
  2. Finely chop your chives, onion and spring onion.
  3. Cut and squeeze your lime so you can use the juice later.

Heating Steps

  1. Toast pumpkin seeds on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
  2. Heat olive oil in a pan, add onion, allspice and cumin and fry at a lower temperature for several minutes.
  3. Sauté your broccoli in a pan over medium heat for 6-10 minutes. Cover with a lid so your veggies become more tender.
  4. Lower the heat, add fish sauce, hot sauce, lime and olive oil to your pan and mix.
  5. Add Chives, Pumpkin Seeds and Spring Onion on top.
  6. Enjoy your vegetable rice on it's own or as a side dish to accompany just about anything.
