Wash and cut your cauliflower and iceberg lettuce so that they all have a similar size and shape.
Slice your avocado as you like. Try to ensure all pieces are roughly the same size.
Finely chop your carrot, garlic and onion.
Cut and squeeze your lemon so you can use the juice later.
Heat olive oil in a pan and add garlic and onion, and fry at lower temperature for several minutes.
Turn up the heat to medium and add Carrot and Cauliflower to your pan and fry for 10 minutes.Finally, add White Beans and fry for 5 extra minutes.
Forming Your Patties
Add carrot, cauliflower, garlic, lemon, onion and white beans to your blender and pulsate until desired texture. If the mixture seems too dry, you can add a bit of water or liquid from the can of beans.
Wet your hands and shape the dough into patties. Fry them in oil on high heat for a few minutes per side until they become golden brown.
Then remove from pan and roast in the oven for 15-20 minutes at 200°C (400°F).
Fry your eggs and set aside to use as a topping.
Toast your bun in the oven until the desired level of crispiness.
