Mint Melon Summer Salad

Ingredients

2 tbsp
Coconut Oil

Cucumber
30 grams
Kale
2 tbsp
Lemon
40 grams
Melon
20 leaf
Mint
25 grams
Walnuts
50 grams
Watermelon

Prep

  1. Wash and cut your kale so that they all have a similar size and shape.
  2. Finely chop your mint.
  3. Slice your cucumber and watermelon as you like. Try to ensure all pieces are roughly the same size.
  4. Cut and squeeze your lemon so you can use the juice later.

Heating Steps

  1. Toast walnuts on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.

Building A Salad

  1. Mix cucumber and kale together in a bowl.
  2. Mix coconut oil and lemon together in a bowl with salt and pepper, then drizzle on top of your dish.
  3. Add Melon, Mint, Walnuts and Watermelon on top.
