Finely chop your basil, garlic, parsley and spring onion.
Grate or slice your Cheddar Cheese.
Cut and squeeze your lemon so you can use the juice later.
Mix basil, cheddar cheese, garlic, lemon, parsley, spring onion and tomato paste together in a bowl with salt and pepper, then pour on top of your vegetables as they are cooking. Remove from heat once sauce has slightly thickened.
