Stayin' Alive Thermomix Chunky Borscht With Parsnips

Ingredients

Apple Cider Vinegar
50 grams
Beets

Carrot
1 tsp
Cumin
2 Clove
Garlic
1 tbsp
Olive Oil

Potatoes
190 ml
Stock
15 grams
Walnuts

Steps

  1. Peel and cut your beets, carrot, parsnips and potatoes as needed, so that they can fit through the lid opening (approximately 2-3 cm pieces).
  2. Place oil and carrot, garlic and onion in mixing bowl and chop 3 sec/speed 4. Scrape down sides of mixing bowl with spatula then sauté 6 min/120°C/speed 1.
  3. Add your beets, cumin, parsnips and potatoes to the mixing bowl.
  4. Add stock then cook 25 min/100°C/reverse/speed 1.
  5. Toast walnuts on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
  6. Add apple cider vinegar and mix 45 sec/speed 2.
  7. Add Walnuts on top.
  8. Hints & Tips: -If using beans or other legumes, make sure to use the canned variety.
