Just Beat It Ovenroasted Mediterranean Veggies With Asparagus

Peel and cut your onion and potatoes. All ingredients should have a similar size and shape.
Wash and cut your asparagus, brussels sprouts, celery stalk and kale so that they all have a similar size and shape.
Finely chop your garlic and parsley.
Cut and squeeze your lemon so you can use the juice later.
Preheat your oven to 200°C (400°F).
Spread the Brussels Sprouts, rosemary evenly on an oven tray and splash with oil. Set the oven to 200°C/400°F and roast for 15 minutes.Then add Asparagus, Garlic, Onion and Potatoes and roast for 15 minutes.Finally, add Kale and roast for another 15 minutes.
Mix asparagus, brussels sprouts, celery stalk, kale, onion and potatoes together in a bowl.
Mix lemon together in a bowl with salt and pepper, then drizzle on top of your dish.
